I was going to write a lovely blog post full of words but I have very little to say today. So, I present to you with love and hugs this delicious recipe for the best, most creamy, most scrumptious banana bread inspired porridge. Cause it’s SATURDAY YA’LL.
Stovetop “Banana Bread” Porridge
For One Person You Will Need:
1 TBS chia seeds
1 TBS water
1/2 C rolled oats
1/2 C water
1/2 C your choice of milk
Pinch of salt
1 tsp vanilla extract
1/4 tsp cinnamon
1/2 large banana, mashed
First stir together the chia seeds and water in a small dish and set aside; will form a gel.
In a small saucepan mix together the oats, water, milk, salt, vanilla and cinnamon. Cook on a medium heat, stirring until thick and creamy (about 8 -10 minutes).
Remove from heat and mix through the chia seed gel and banana.
In a large bowl with the remaining banana sliced, 1TBS natural yoghurt, a drizzle of maple syrup and a small handful of nuts. Add more milk if needed.
Enjoy with a big mug of coffee and a thorough Saturday blog reading session.
