Chia pudding – I’m housesitting for a friend and brought this with me; just 1/4Cchia seeds, 1C coconut milk, 1tsp honey and a handful of shredded coconut – stir or shake together then keep it in the fridge overnight for breakfast the next day. This was enough for two breakfasts!



Oh coffee, I could write an ode to you.


This was seriously delicious. I was catching up with a couple of friends and we went to Cafe L’affare. I had haloumi and smashed avocado bruschetta with a healthy serving of rocket and lots of lovely lemon. My kind of meal.


And then, because I am a bit of a rebel child, I took my friend out for cocktails. We had this almond and coconut milk concoction which tasted just like cookies and milk. It is the weekend after all…



Decided to try this little yoghurt pot that I picked up from the supermarket. Just thick, plain greek yoghurt with a date and chia paste with little cacao nibs. So tasty, probably a bit more on the treat side for me.



This is like, the perfect lazy girl’s solo dinner. Couldn’t really consider this a “health food” but it is all good quality, fresh ingredients; a healthy serving of fresh pasta (I used pappardelle) cooked al dente and tossed with olive oil, salt and pepper, a teaspoon of capers and shreds of paper thin prosciutto. Serve it with a couple of dollops of ricotta and buon appetito! Inspired heavily by Hungry and Frozen’s Pay Day Pasta.
