Serves 1 for a solo brunch date.
2 eggs – milk – vanilla extract – ground cinnamon – 2 slices bread – coconut oil – coconut sugar – toppings of your choice
2 eggs, 3 tablespoons of milk, 1/2 teaspoon of vanilla extract, 1/2 teaspoon of ground cinnamon in a large bowl until combined.
2 slices of bread in the mixture, flip so both sides are coated evenly. The bread should absorb all the liquid after a few minutes.
1 teaspoon of coconut oil in a heavy pan over a medium-high heat.
Add bread, cooking for two to three minutes each side, or until golden brown on both sides and just cooked through.
Slice up a banana, place on top.
Mix 1 teaspoon of coconut sugar and a pinch or two of cinnamon and sprinkle over.
Eat greedily with an obligatory mug of tea.
OTHER SERVING IDEAS
+ Fresh fruit, honey and yoghurt
+ Maple syrup, bananas and chopped pecans
+ Heat frozen blueberries for 1 minute in a bowl until syrupy, pour over top, then top with some coconut whip or whipped cream
+ Fry up some bacon and drizzle everything with syrup ❤
